INGREDIENTS

  • 350 g (111/4 oz) dried somen noodles
  • 12 cooked medium prawns, shelled

CHILLI AND LIME DIPPING SAUCE

  • 1 teaspoon sesame oil
  • 2 red chillies, seeded and chopped
  • 2 teaspoons grated ginger
  • 4 tablespoons soy sauce
  • 2 tablespoons sweet sherry
  • 3 tablespoons lime juice
  • 2 tablespoons brown sugar

INSTRUCTIONS

1 Place noodles in a saucepan of boiling water and allow to boil for 10 minutes or until al dente. Drain and run noodles under cold water. Chill noodles in refrigerator until cold.

2 To make dipping sauce, place oil in a saucepan over medium heat. Add chillies and ginger, and saute for 1 minute. Remove pan from heat and stir soy sauce, sherry, lime juice and sugar through oil mixture.

3 To serve, place noodles and prawns on serving plates. Spoon dipping sauce into small bowls and place one on each plate.
