- 125 ml (4 fl oz) water
- 750 g (1½ lb) baby carrots, fresh or frozen
- 1 tablespoon margarine
- 1/2 tablespoon soft light brown sugar
- 2 tablespoons honey
- 2-3 tablespoons finely chopped fresh parsley
1 Pour the water into a medium saucepan. Add the carrots and bring to the boil. Reduce the heat, cover and simmer about 10 minutes, or until the carrots are tender-crisp. Drain. If using frozen carrots, follow packet directions for cooking.
2 Melt the margarine in a frying pan over medium-high heat. Add the sugar, honey and carrots. Reduce the heat and turn the carrots frequently for 1-2 minutes until well glazed. Sprinkle with parsley before serving.
