INGREDIENTS
- 2 chicken breast fillets on the bone
- 1 tablespoon olive oil
- 2 onions, sliced
- 2 tablespoons sliced preserved lemon
- 2 red chillies, halved
- 2 cloves garlic, crushed
- 4 sprigs marjoram
- 1 cup (8 fl oz) white wine
- 1 cup (8 fl oz) chicken stock
INSTRUCTIONS
1 Halve chicken breasts and cut into pieces. Heat oil in a frypan over high heat. Add chicken to pan and cook for 1 minute on each side or until golden. Place chicken in a baking dish.
2 Add onions to pan and cook for 4 minutes or until well browned. Spoon onions, lemon, chillies, garlic, marjoram, wine and stock over chicken.
3 Cover dish and bake in a preheated 160°C (325°F) oven for 20 minutes. Remove cover and bake chicken for 5 minutes more.
4 To serve, place chicken in bowls and serve with steamed couscous.
