INGREDIENTS
- 2 teaspoons oil
- 2 tablespoons shredded ginger
- 4 shallots, chopped
- 1/2 cup (4 fl oz) sweet sake or mirin
- 2 tablespoons light soy sauce
- 1 tablespoon oyster sauce
- 500 g (1 lb) fresh asparagus
- 1 tablespoon black sesame seeds
- Pickled ginger to serve
INSTRUCTIONS
1 Heat oil in a wok or frypan over medium heat. Add ginger and shallots and stir fry for 2 minutes.
2 Add sake, soy sauce and oyster sauce to pan and cook for 2 minutes. Add asparagus to pan and stir fry for 3-4 minutes or until asparagus is bright in colour.
3 Stir through sesame seeds. Serve in deep bowls with pickled ginger.
