INGREDIENTS

  • 2 chicken breast fillets
  • 6 Roma tomatoes, halved
  • Olive oil
  • Cracked black pepper
  • 100 g (3¼ oz) baby spinach leaves
  • 1 cup basil leaves
  • 3 tablespoons oil
  • 8 slices sourdough or Turkish bread
  • 100 g (3¼ oz) aged Cheddar cheese
  • Lemon wedges

INSTRUCTIONS

1 Place chicken and tomatoes on a baking dish and sprinkle with olive oil and pepper.

2 Bake in a preheated 160°C (325°F) oven for 20 minutes or until chicken is tender and cooked through. Shred chicken.

3 Place spinach, chicken, tomatoes and basil on half of the bread. Place cheese on remaining slices and grill under a hot grill until cheese has melted and is golden.

4 Place grilled-cheese slices on top of sandwiches and serve with a squeeze of lemon.
