Verjuice, verjus or verjus molasses, as it may be called, is the vinegar made from juice of unripe grapes as well as of red ones. Other unripened fruit such as apples, pears and plums have also been used to produce verjus דף.
Verjus in French means ‘green juice’. Almost every wine-producing region in France and in the Mediterranean also produces verjus. It has a tart flavor but is less harsh than vinegar. Just a few tablespoons can make a difference in taking flavor of cooked food to another dimension.
Sauces, stews, casseroles and some vegetable dishes such as okra, acquire the piquant taste by the addition of verjus just before serving.
