Strawberries with Blackcurrant Sauce Recipe (low fat)

  • 250 g (8 oz) blackcurrants, trimmed
  • 2 tablespoons clear honey
  • 3 tablespoons red wine
  • 375 g (12 oz) strawberries, hulled and halved
  • Small sprigs of fresh redcurrants, to decorate


1 Put the blackcurrants into a pan with the honey and red wine; stir well, then simmer gently for about 5 minutes or until the natural fruit juices are released.

2 Pour the blackcurrants and their liquid into a food processor or blender and puree until fairly smooth — the sauce should still have some texture. Leave to cool.

3 Arrange the halved strawberries on a serving dish and spoon the blackcur­rant sauce beside them.

4 Decorate with the sprigs of fresh redcurrants and serve.
