INGREDIENTS
- 6-8 lamb shanks, trimmed
- 3 cups (24 fl oz) beef stock
- 1 cup (8 fl oz) red wine
- 6 bay leaves
- 4 cloves garlic, peeled
- 8 baby onions, peeled
- 2 sprigs rosemary
- 3 sprigs marjoram
- 1 tablespoon peppercorns
INSTRUCTIONS
1 Place a frypan over high heat. Add lamb shanks to pan and cook for 2 minutes on each side or until they are well browned.
2 Place lamb in a baking dish with stock, wine, bay leaves, garlic, onions, rosemary, marjoram and peppercorns.
3 Cover dish and bake at 160°C (315°F) for 2 hours or until lamb is very tender.
4 Serve lamb shanks in deep bowls with soft polenta or potato and garlic mash.
