INGREDIENTS
- 1 tablespoon oil
- 2 onions, chopped
- 3 cloves garlic, crushed
- 500 g (1 lb) blade or chuck steak, diced
- 3 tomatoes, peeled and chopped
- 1⁄3 cup (2¾ fl oz) lemon juice
- 1 cinnamon stick
- 2 teaspoons ground coriander
- 4 cups (32 fl oz) beef stock
- 1 tablespoon oregano leaves
- 2 cups couscous
- 2 cups (16 fl oz) boiling water
- 1 tablespoon butter
INSTRUCTIONS
1 Heat oil in a saucepan over medium heat. Add onions and garlic and cook for 4 minutes or until golden. Add meat to pan and cook for 5 minutes or until sealed.
2 Add tomatoes, lemon juice, cinnamon, coriander, stock and oregano to pan and allow to simmer for 45 minutes.
3 Place couscous, water and butter in a bowl and allow to stand for 2 minutes.
4 Put couscous in a steamer lined with muslin or cheesecloth and place steamer over simmering beef. Simmer beef for a further 10 minutes.
5 To serve, place couscous in bowls and serve with beef.
