INGREDIENTS
- Vegetable oil, for brushing
- 3 egg whites
- 1 teaspoon cream of tartar
- 75 g (3 oz) caster sugar
- 1 teaspoon cornflour
- 4 kiwi fruit, peeled and thinly sliced
INSTRUCTIONS
1 Cover a baking sheet with non-stick baking paper or foil and lightly brush with oil.
2 Half whisk the egg whites. Add the cream of tartar and whisk until very stiff. Whisk in the sugar a little at a time. Finally whisk in the cornflour.
3 Spoon the meringue mixture on to the prepared baking sheet and lightly flatten into an 18 cm/7 inch circle with a palette knife, building up the edge of the meringue slightly.
4 Bake the meringue in a preheated oven, 110°C (225°F), Gas Mark ¼, for about 1½ hours, until set. Remove from the oven and allow to cool, then carefully peel off the lining paper.
5 Transfer the meringue to a serving plate and arrange the kiwi fruit on top. Serve on the day of making.
