Sweet peaches, delicate almonds, and an all-butter crust come together in this simple peach almond galette.

  • 4 peaches
  • 185 g (6 oz) ready-made puff pastry
  • ½ cup ground almonds
  • 2 tablespoons soft butter
  • ½ teaspoon vanilla extract
  • 4 tablespoons demerara sugar


1 Cut peaches in half, remove stones and slice. Cut pastry into 4 rectangles.

2 Combine almonds, butter and vanilla extract and spread mixture down the centre of the pastry.

3 Top pastry with peaches and sprinkle with sugar. Place galette on a baking tray and bake in a preheated 200°C (400°F) oven for 15 minutes or until pastry is puffed and golden.

4 Serve with thick cream or ice cream.
