INGREDIENTS
- 2 teaspoons ground cumin
- 1 green chilli
- 3 stems coriander
- 2 cloves garlic
- 2 slices ginger
- 2 teaspoons garam masala
- 4 small snapper, gutted
- Flour
- Oil for deep frying
INSTRUCTIONS
1 Place cumin, chilli, coriander, garlic, ginger and garam masala in a small food processor or mortar and pestle and process until smooth.
2 Make deep slits in the flesh of the snapper. Rub herb mixture over fish and allow to marinate in refrigerator for 1 hour.
3 To cook, deep fry snapper in hot oil for 1-2 minutes or until fish is crisp and cooked through. This is most easily done in a wok. Serve with thin, fried potato crisps.
