Dried Tomato
Reconstitute dry-packed sun-dried tomatoes by placing them in a bowl and pouring boiling water over them. Soak the tomatoes for about 20 minutes. Drain, rinse and squeeze all water out. Then use whole or chopped according to recipe. The soaking liquid can be saved to be used in soups and sauces after straining. Sun-dried tomatoes can also be purchased oil-packed in jars. Spoon the amount needed into a sieve and rinse with boiling water. Drain and squeeze all water out before using. The oil in the jar, which has a high tomato flavor can be used in salad dressings and pasta sauces or can be brushed on bruchetta and crostini.
