A foolproof brownie recipe for a chocolate bake. This recipe combines rich cocoa powder with chocolate chips to create a fudge brownie you won’t want to share!

  • 125 g (4 oz) butter
  • 125 g (4 oz) dark chocolate
  • 2 eggs
  • 1 cup caster (superfine) sugar
  • 1 cup plain flour
  • 2 tablespoons self-raising flour
  • ¾ cup chopped pecan or macadamia nuts


1 Place butter and chocolate in a saucepan over very low heat and stir until mixture is just smooth.

2 Place eggs and caster (superfine) sugar in a bowl and beat until mixture is pale and thick. Fold chocolate mixture, sifted flours and nuts through butter and eggs and pour mixture into a greased 20 cm (8 inch) square cake tin.

3 Bake in a preheated 180°C (350°F) oven for 30 minutes or until brownies are set. Allow brownies to cool and cut them into squares.

4 Serve with strong espresso coffee.
