INGREDIENTS
- 12 apricots
- ¼ cup sugar
- 1⁄3 cup (2 ¾ fl oz) water
- 1½ cups (12 fl oz) sauternes or sweet dessert wine
- 1 vanilla bean
INSTRUCTIONS
1 Place apricots in a bowl of boiling water and allow to stand for 4 minutes. Carefully drain water and peel apricots.
2 Place sugar and water in a saucepan over low heat and cook, stirring, until sugar has dissolved. Allow syrup to simmer, and add sauternes and vanilla bean.
3 Simmer for 5 minutes. Add apricots and simmer for 3-5 minutes or until apricots are soft. Serve in a deep plate with honey biscuits.
