INGREDIENTS
- 4 lean boneless pork loin chops, about 100 g (4 oz) each
- 1 onion, sliced
- 200 ml (7 fl oz) unsweetened clear apple juice
- 2 teaspoons chopped fresh thyme
- 2 cooking apples
- 2 tablespoons lemon juice
- 15 g (½ oz) cornflour
- 2 tablespoons cold water
- Pepper
INSTRUCTIONS
1 Trim away any visible fat from the pork chops. Place the chops in a large heavy-based frying pan with the onion, apple juice and thyme.
2 Bring the apple juice to the boil, cover the pan with a lid and simmer gently for about 15 minutes, then turn the chops over and simmer for a further 15 minutes or until the meat is fully cooked.
3 Meanwhile, core and peel the apples. Cut them into 5 mm (1/4 inch slices and toss in the lemon juice to prevent browning.
4 When the pork is cooked, add the apple slices and cook for a further 5 minutes. Blend the cornflour with the water and stir well into the apple juice to thicken the sauce.
5 Simmer for 1-2 minutes or until the apples are just tender. Do not overcook or the apples will lose their texture and shape and spoil the look of the dish.
