INGREDIENTS
- 4 pork cutlets
- 2 tablespoons basil oil
- 1 tablespoon butter
- 4 fresh figs, quartered
- 3 tablespoons balsamic vinegar
- 1⁄3 cup (2¾ fl oz) beef stock
- 2 tablespoons brown sugar
- Mashed potato to serve
INSTRUCTIONS
1 Brush pork with basil oil. Heat a frypan over medium heat. Add pork and cook for 2-3 minutes on each side or until cooked to your liking.
2 Remove pork from pan, cover and keep it warm. Add butter to pan and heat until melted. Add figs to pan and cook for 2 minutes or until golden.
3 Remove figs from pan and set aside. Add balsamic vinegar, stock and sugar to pan. Bring mixture to the boil and simmer for 4 minutes or until thickened and reduced.
4 Return figs to pan to heat through. To serve, place piles of mashed potato on serving plates. Top potato with pork, figs and balsamic sauce.
