INGREDIENTS
- 1 tablespoon oil
- 1 stalk lemon grass, bruised
- 4 pieces galangal
- 2 red chillies, sliced
- 3 coriander roots
- 500 g (1 lb) beef strips
- 8 kaffir lime leaves, shredded
- 1 cup (8 fl oz) coconut cream
- 2 teaspoons fish sauce
- 2 teaspoons brown or palm sugar
- 1/2 cup Thai basil leaves
INSTRUCTIONS
1 Heat oil in a wok over medium heat. Add lemon grass, galangal, chillies and coriander roots and cook for 1 minute.
2 Add beef to wok and stir fry for 4 minutes or until well browned.
3 Add lime leaves, coconut cream, fish sauce and sugar to wok and cook for 2 minutes. Stir through basil and serve on steamed rice.
