INGREDIENTS
- 300 g (10 oz) dried buckwheat soba noodles
- 1 cucumber, chopped
- 1 tablespoon shredded ginger
- 2 tablespoons black sesame seeds
- 4 shallots, chopped
- 125 g (4 oz) sashimi tuna, thinly sliced
DRESSING
- 4 tablespoons Japanese soy sauce
- 4 tablespoons mirin
- Wasabi to taste
INSTRUCTIONS
1 Place noodles in a large saucepan of boiling water. When water returns to boil, add 1 cup (8 fl oz) cold water and bring to boil again.
2 Cook for 8 minutes or until noodles are tender. Rinse noodles under cold water and drain well.
3 Place noodles in refrigerator to cool. Toss cold noodles with cucumber, ginger, sesame seeds and shallots. Place noodles on serving plates and top with tuna.
4 To make dressing, place soy sauce, mirin and wasabi in a bowl and whisk to combine. Serve dressing in small bowls next to each salad.
