INGREDIENTS
- 375 g (12 oz) lean pork, diced
- 1 onion, sliced
- 150 g (5 oz) carrot, sliced
- 500 g (1 lb) baby new potatoes
- 400 ml (14 fl) oz pork stock
- 2 bay leaves
- 100 g (4 oz) frozen peas
- 75 g (3 oz) green beans, trimmed
- 25 g (1 oz) cornflour
- 50 ml (2 fl oz) cold water
- Pepper
INSTRUCTIONS
1 Trim away any visible fat from the pork. Place the meat in a saucepan with the onion, carrot, potatoes, stock and bay leaves. Bring to the boil, cover and simmer for about 30 minutes, or until the meat is tender.
2 Add the peas and beans. Blend the cornflour with the water and stir into the casserole. Bring back to the boil, then cover and simmer for a further 5 minutes, stirring occasionally.
3 To serve, remove the bay leaves and season the casserole with a grinding of pepper.
