Curry is a blend of spices. It is not dependant on any one ingredient. It comprises cinnamon, coriander, cumin, turmeric, pepper, cardamom, ginger, nutmeg and cloves. Curry is the staple spice in Indian cooking, Each cook prepares his or her own blend of spices to produce curry powder. It is advised never to add curry powder to any dish without precooking it in a fat. This brings out its aroma. Curry paste is produced by mixing curry powder with water or broth and is classified as green, red or yellow. The best curry powder and paste are made with Whole spices that are first roasted and then ground.
