Cloud Ear Fungus

This is known by many names e.g.. wood ear, snow fungus, sea jelly or jelly sheet. It is actually a dried fungus which when soaked in water, resembles a puffed ear, hence the name. It has no flavor and is used only to add texture to a dish.They are available in Chinese grocers.
