Tamarind and Lemon Grass Beef Recipe

INGREDIENTS

1 tablespoon oil
2 stalks lemon grass chopped
6 shallots, chopped
2 green chillies, chopped
500 g (1 lb) lean beef strips
3 tablespoons tamarind concentrate
2 tablespoons lime juice
2 teaspoons fish sauce
2 teaspoons palm or brown sugar
1 cup shredded green pawpaw

INSTRUCTIONS

1 Heat oil in a wok or frypan over high heat. Add lemon grass, shallots and chillies to wok and stir fry for 3 minutes.

2 Add beef to wok and stir fry for a further 5 minutes or until meat is well browned.

3 Add tamarind, lime juice, fish sauce, sugar and pawpaw to wok and stir fry for a further 4 minutes or until heated through. Serve with coconut rice.
