Spreads and Fillings: Cottage Cheese with Ginger and Honey
- 8oz (225g) cottage cheese
- 3 tablespoons double cream
- 1 piece preserved stem ginger
- 3 tablespoons honey
- 1 oz (25 g) cut mixed peel
- Sieve the cottage cheese into a bowl.
- Lightly whip the cream and fold into the cheese.
- Finely dice the ginger and stir into the mixture, then stir in the honey.
- Chill the cottage cheese in the refrigerator. Serve garnished with cut mixed peel.
