INGREDIENTS
- 1 tablespoon butter
- 1/2 cup unsalted cashew nuts, chopped
- 200 g (6 1/2 oz) green beans, trimmed
- 150 g (5 oz) snake beans, halved
- 150 g (5 oz) yellow beans, trimmed
- 1/3 cup (2 3/4 oz) lemon juice
- 2 tablespoons palm or brown sugar
- 1 tablespoon light soy sauce
- 2 tablespoons mint leaves
INSTRUCTIONS
1 Heat butter in a frypan or wok over medium heat. Add cashews to pan and stir fry for 2 minutes.
2 Add beans to pan and stir fry for 3 minutes or until beans are crisp but tender.
3 Add lemon juice, sugar, soy sauce and mint to pan and cook for 1 minute or until heated through. Serve with couscous.
