Spicy Baked Fish Recipe
Ingredients
- 1 x 1.5-2 kg/3-4 lb sea bass or bream, cleaned, scaled and filleted
- Juice of 2 limes
- 6 tablespoons olive oil
- Deep-fried onion rings, to garnish

- 4 oz (125 g) soft breadcrumbs
- 2 oz (50 g) butter, melted
- 1 tablespoon finely chopped chives
- 1 teaspoon finely chopped coriander
- 1 small green pepper, cored, deseeded and finely chopped
- ½ onion, grated
- Grated rind and juice of 1 lime
- Pinch of grated nutmeg
- Salt and pepper #topping#
- 2 tablespoons oil
- 1 small onion, chopped
- 1 garlic clove, crushed
- 1 fresh red chilli, deseeded and chopped
- 1 tablespoon chopped fresh coriander
- 4 tablespoons Fish Stock
Instructions
- To make the stuffing, put the breadcrumbs into a bowl and mix in the melted butter then all the remaining stuffing ingredients. Blend well then cover and set aside. 2 Wash and dry the fish and place in a large dish. Sprinkle with the lime juice and season inside and out with salt and pepper. Set aside in a cool place for about 1 hour to marinate. 3 To make the topping, heat the oil in a frying pan and add the onion and garlic. Fry gently until the onion is softened and golden. Add the chilli and continue cooking for 2—3 minutes, then stir in the chopped coriander and fish stock.
- Remove the fish fillets from the marinade and sandwich together with the stuffing. Fasten with skewers or toothpicks. Pour over the oil and any remaining marinade, and scatter the topping mixture over the fish. Bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 20 minutes. Serve garnished with deep-fried onion rings.
