Smorgasbord Favourites: Mariner’s Breakfast Recipe
- 1 oz (25 g) soft butter
- 1 large slice brown bread
- 2 smoked trout fillets
- 1 egg
- 1 teaspoon single cream
- Salt and pepper
- A little chopped fresh parsley
- Spread some butter on the bread and top with the trout fillets.
- Beat the egg with the cream, salt, and pepper.
- Melt, the remaining butter in a pan and scramble the egg mixture over a low heat.
- Spoon onto the trout and sprinkle with parsley.
