Sesame Shrimp Toasts with Crispy Seaweed | Chinese Snack Recipes

Ingredients
  

  • 4 oz pork fat
  • 6 oz cooked shrimp
  • 1 egg white
  • Salt and pepper to taste
  • 1 tbsp cornstarch
  • 2 slices white bread
  • 7 tbsps sesame seeds
  • Oil for deep frying

  • 2 lbs greens
  • 4 tbsps split almonds
  • Oil for deep frying
  • ½ tsp salt
  • 1½ tsps sugar

Instructions
 

  • #Have great fun trying to eat crispy seaweed with your chopsticks!# Finely chop pork fat and shrimp. Blend together well with egg white, salt, pepper and cornstarch. Spread the “paste” thickly on the 2 slices of bread. Remove the crusts.
  • Sprinkle the paste thickly with sesame seeds pressing them on well.
  • Heat the oil. Lower one slice of bread at a time into the hot oil, spread side down, for 2 minutes. Turn over and fry the other side for ½ minute. Repeat for other slice of bread.
  • Cut each shrimp toast in half, then into finger-sized strips.
  • With a very sharp knife, cut the greens into the finest shreds possible. Dry, by spreading them out on paper towels for half an hour. Deep fry, or shallow fry the almonds until golden. Drain well.
  • Heat the oil until it is about to smoke. Remove from the heat for ½ minute.
  • Add all the shreds of greens. Stir and return pan to the heat and fry for 2-3 minutes. Remove and drain well.
  • Serve the shrimp toasts and crispy seaweed on a well heated platter, sprinkle crispy seaweed evenly with salt, sugar, and almonds. #TIME# Preparation takes 10 minutes for the shrimp toasts and 5 minutes for the seaweed, cooking takes about 10 minutes for the shrimp toasts and about 3 minutes for the crispy seaweed. #BUYING GUIDE# Sesame seeds can be bought from health food stores as well as some good supermarkets.
