Rice Salad With Sun-Dried Tomato Dressing Recipe
Ingredients
- 2 cups boiled rice
- 8 sun dried tomato halves
- 1/3 cup toasted pine nuts
- 4 scallions, minced
- Sea salt and freshly ground pepper
- 3 unripe apricots or red plums, seeded and cut into small cubes
- 1 bunch of fresh coriander or parsley, chopped up

- 6 sun dried tomato halves
- 6 tablespoons extra virgin olive oil
- 3 tablespoons balsamic vinegar
- 1 large clove garlic, minced
- 1 teaspoon chili powder or flakes
- Sea salt and freshly ground pepper

- Reconstitute dried tomatoes and chop to desired size.
- Flake rice with a fork and add all other ingredients except fresh coriander or parsley.
- Add the dressing and mix until well blended. Correct seasoning.
- Sprinkle in the chopped up greens and mix once more.
