INGREDIENTS
- 500 g (1 lb) pepper linguini
- ½ cup Thai basil leaves
- ¼ cup Vietnamese mint leaves
- 2 green chillies, chopped
- 4 tablespoons salt-reduced soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon kaffir lime juice
- 2 tablespoons mirin or sweet white cooking wine
- Steamed baby bok choy
INSTRUCTIONS
1 Place linguini in a saucepan of boiling water and cook for 3 minutes or until al dente. Drain.
2 Toss basil and mint through linguini. Combine chillies, soy sauce, sugar, lime juice and mirin and pour over pasta.
3 Toss to combine. Place linguini on serving plates and serve with steamed baby bok choy.
