Pecan Caramel Rolls Recipe
Note: Thermomix is used in this recipe. You may adapt it to your own kitchen appliances.
Ingredients
- #Dough#
- 60g butter
- 430g milk
- 155g honey
- 2 1/2 teaspoon yeast
- 1 egg
- 820g baker’s flour
- 2 teaspoons salt
- 1 cup pecans, roughly chopped
- #Caramel Sauce#
- 1 1/4 cups cream
- 1 1/4 cups brown sugar
- #Cinnamon Filling#
- 1/3 cup brown sugar
- 2/3 cup castor sugar
- 1 tblspn cinnamon
Instructions
- #Soft and sweet, these rolls will get a lip-smacking smile from everyone. They rise nice and high, hold their shape and have a gooey caramel sauce that’s scrumptious. Who wouldn’t be happy when offered one of these rich, delicious pinwheels of warm raised yeast dough topped with pecans?# Dough: Melt butter in bowl 2 minutes, on 90°C, Speed 2.
- Add milk and honey, heat for 2 minutes, on 37°C, Speed 2.
- Sprinkle yeast through hole in lid while mixing.
- Let stand for 5 minutes until frothy, stir gently.

- Add egg and mix in.
- Add 750g flour and salt. Mix for 6 seconds on Speed 6. Knead for 2 minutes at Interval Speed. Add remaining 1/2 cup flour if necessary.
- Turn out dough onto bread mat or floured surface. Cut in half, shape each half into a ball. Cover, and let rise for 1-2 hours until doubled in bulk. #Caramel Sauce# Place cream and sugar in bowl.
- Cook for 7 minutes on 90°C, Speed 2. #Cinnamon Filling# Mix all together in small bowl and set aside. #To Make The Rolls# Grease a 38 x 25 cm baking dish. Spread 1 1/2 cups caramel sauce over the base.
- Roll out dough balls into 2 rectangles 38 x 23 cm with the short side facing you.
- Brush with 1 1/2 tblspns of the melted butter, sprinkle with half the cinnamon sugar.
- Starting at the bottom, roll up the dough into a log.
- Pinch the seam to seal. Cut log into 6 slices.
- Arrange slices, cut side up, in prepared dish. Repeat with remaining dough.
- Cover and let rise in warm spot until doubled in size, 45 minutes – 1 hour.
- Bake in 1800C oven until rolls are golden, about 35 minutes.
- Brush with remaining melted butter. Stand 3 minutes.
- Invert onto flat tray to cool for 5 minutes.
- Separate rolls with two forks.
- Serve each roll on individual plate, topped with remaining warm caramel sauce and a sprinkling of pecans.
