INGREDIENTS
- 4 eggs
- 1⁄3 cup sugar
- 1 1⁄3 cups (10% fl oz) cream
- 1 teaspoon vanilla extract
- 3 tablespoons flour
- 2 peaches, sliced
- 1 cup mixed berries
INSTRUCTIONS
1 Place eggs, sugar, cream and vanilla extract in a bowl and beat until frothy. Sift flour over egg mixture and whisk until smooth.
2 Pour 3/4 cup cream mixture into a greased 23 cm (9 inch) pie dish. Bake in a preheated 160°C (315°F) oven for 5 minutes or until cream is just set.
3 Remove dish from oven and sprinkle peaches and berries over baked cream.
4 Pour remaining cream mixture over fruit and bake for 15-20 minutes or until set. Serve in wedges with ice cream.
