INGREDIENTS

  • 5 onions, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 tablespoons sage leaves
  • 250 g (8 oz) ready-made puff pastry
  • 150 g (5 oz) soft goats’ cheese
  • Cracked black pepper

INSTRUCTIONS

1 Place onions, oil, butter and sage in a saucepan over low heat. Cook for 12 minutes or until onions are soft and golden.

2 Roll out pastry on a lightly floured surface until it’s 3 mm (1/8 inch) thick. Trim pastry to a 18 x 25 cm (7×10 inch) rectangle and place on a baking tray. Spread goats’ cheese over pastry and top with pepper.

3 Spoon onions over goats’ cheese. Bake in a preheated 200°C (400°F) oven for 20 minutes or until pastry is puffed and golden. Serve with a salad of mixed greens.
