INGREDIENTS
- 1 cup sugar
- 4 cups (32 fl oz) water
- 5 cm (2 inch) piece ginger, shredded
- 3 tablespoons lime juice
- Rind of 1 lime, cut into thin strips
- 4 nashi
INSTRUCTIONS
1 Place sugar, water, ginger, lime juice and rind in a saucepan and stir over low heat until sugar has dissolved. Increase heat and allow mixture to simmer for 5 minutes.
2 Peel and halve nashi, and brush with extra lime juice to prevent browning. Place nashi in a bowl and pour over syrup.
3 Refrigerate for 2 hours, stirring occasionally. Serve with lime and ginger syrup, and a scoop of toasted coconut ice cream.
