INGREDIENTS

  • 2 pears, peeled, cored and sliced
  • 12 small slices panettone or brioche, chopped
  • 4 eggs
  • 1 cup (8 fl oz) cream
  • 1 cup (8 fl oz) milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons caster (superfine) sugar
  • Brown sugar

INSTRUCTIONS

1 Grease four 1 1/4-cup capacity ramekins* or large cappuccino cups with butter.

2 Place pears and panettone in ramekins. Combine eggs, cream, milk, vanilla and sugar.

3 Pour mixture over panettone and sprinkle tops with brown sugar. Allow puddings to stand for 5 minutes.

4 Place ramekins in a baking dish half filled with water. Place dish in a preheated 180°C (350°F) oven for 25-30 minutes or until puddings are firm.

5 To serve, place ramekins on a plate or invert puddings onto a plate and serve with small ramekins of toffee ice cream.
