1-To soften the gelatine: pour the water, or other liquid called for in the recipe, into a small saucepan and sprinkle the gelatine evenly on top of the liquid. 2-Let soak about 5 minutes; the gelatine will swell to a spongy consistency. 3- To melt the gelatine: warm the saucepan over very low heat, or set it in a large bowl of hot water. Heat gently without stirring, shaking the pan occasionally. Stir the warm melted gelatine into a tepid mixture until evenly distributed. TAKE CARE: Do not stir the gelatine during melting, or it may form lumps.
