STEP 1: With the point of a small, sharp knife, cut around the stalk end of the apple; remove the stalk. Repeat with the flower end.
STEP 2: With the same knife, cut the apple lengthwise in half.
STEP 3: With a melon baller, carefully scoop out the core and pips from the center of each apple half, leaving as neat a shape as possible.
