Are the basic dressing for salads and vegetables. They are very easy to make and some can keep in the fridge at least one week. Use a jar with a tight-fitting lid, a blender or whisk in a small bowl: whatever it is more convenient for you.

- 1 avocado, peeled pitted and sliced
- 1 bunch green onions
- Sea salt & pepper
- 1/2 cup water and a pinch of lemon juice.
1 Everything goes in the blender.
Carrot Dressing Recipe
(Carrot juice is a great dressing base!)
- Juice of 2 carrots, extracted
- 1/2 tsp honey
- 1/2 cup lemon juice
- 1/2 cup extra virgin olive
1 Mix everything and add to the salad of your choice.
Tomato Dressing Recipe
- 3 tbsp tomato juice
- 1 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 garlic clove, chopped
- 1/2 tsp salt
- 1/4 teaspoon freshly ground black pepper
- 1 tsp brown sugar
1 In a small bowl, combine all the ingredients; whisk well.
Excellent for mixed greens that have roasted peppers on top, or with cucumber-onion salads. (See recipe in Appetizers section.)
