INGREDIENTS
- 12 garfish, gutted and backbone removed
- Flour
- Olive oil
FILLING
- 250 g (8 oz) orange sweet potato
- 2 tablespoons butter
- 3/4 cup fresh breadcrumbs
- 1 tablespoon chopped preserved lemon
- 1 teaspoon harissa
- 1 teaspoon cinnamon
- English spinach for serving
INSTRUCTIONS
1 To make filling, boil or steam sweet potato until soft. Mash sweet potato with butter. Combine mash, breadcrumbs, lemon, harissa and cinnamon.
2 Spoon filling into cavities of garfish and close cavities securely with toothpicks.
3 Toss garfish lightly in flour and shallow fry in hot olive oil for 1-2 minutes on each side. Serve with English spinach.
