INGREDIENTS
- 500 g (1 lb) fettuccine
- 3 tablespoons fruity olive oil
- ¼ cup basil leaves
- 5 cloves garlic, crushed
- 2 tablespoons baby capers
- 2 tablespoons lemon juice
- 4 bocconcini, sliced
- Parmesan cheese shavings
- Cracked black pepper
INSTRUCTIONS
1 Place fettuccine in a large saucepan of boiling water and cook until al dente. Drain and keep pasta warm.
2 Place oil in a frypan over medium heat. Add basil, garlic and capers and fry until garlic is golden and basil is crisp. Add lemon juice and toss basil mixture through pasta.
3 Place slices of bocconcini on serving plates.
4 Top with pasta and shavings of parmesan and a generous sprinkling of cracked black pepper. Serve immediately.
