INGREDIENTS
- 750 g (11/2 lb) medium green (raw) prawns, peeled
- 1 tablespoon olive oil
- 2 teaspoons cracked pepper
- 1 tablespoon chopped coriander
- 500 g (1 lb) chilli pasta
- 250 g (8 oz) fresh asparagus, trimmed
- 4 limes, halved
- 125 g (4 oz) baby English spinach leaves
- 1/4 cup basil leaves
- Olive oil to serve
- Cracked black pepper
INSTRUCTIONS
1 Place prawns, oil, pepper and coriander in a bowl and toss to combine. Place pasta in a saucepan of boiling water and cook until al dente.
2 Drain pasta and keep it warm. Boil or steam asparagus until tender, and chop into 5 cm (2 inch) pieces.
3 Place prawns and limes on a hot char grill or barbecue and cook for 1 minute on each side or until tender.
4 Toss prawns with chilli pasta, asparagus, spinach and basil.
5 Squeeze juice from the sweet grilled limes over pasta and top with a drizzle of olive oil and cracked black pepper. Serve immediately.
