Try mixing different spices, juices, herbs, and you’ll discover the amazing flavors that you just created yourself; get into the kitchen and have fun trying new inventions and mixtures. Here are some of the most common members of the “Marination Team”; you divide them up in different groups to create the desired result. Only by mixing them can you understand who is compatible with whom. Here are the main ones: Orange, lemon or lime juice, rice vinegar, red or white wine, garlic, onion, olive oil, sesame oil, ginger, herbs, soy sauce, honey.

INGREDIENTS
- 2 tbsp olive oil
- 1 big garlic clove, crushed
- 2 tsp honey
- 1/2 cup orange juice
- 4 fresh lavender flowers
- 2 tbsp chopped fresh thyme
- 2 tbsp chopped fresh marjoram
- Salt & pepper to taste
INSTRUCTIONS
1 Combine the lavender flowers with the other herbs, the garlic, the oil and orange juice. Add salt and pepper.
2 Very good to marinate fish or chicken fillets.
3 For best results: leave fish in the marinade for at least 1 hour, and 2 hours for chicken.

VARIATION
Pineapple Marinade For Chicken and/or Beef
- 1 cup freshly made pineapple juice
- 2 tbsp apple vinegar
- 2 garlic cloves, minced
- 1 1/2 fresh grated ginger
- 1/4 cup light soy sauce
- 1/3 cup honey
1 Combine all the ingredients, either in a small bowl or in the blender or food processor. Coat the chicken or beef fillets, or chunks.
2 Toss well and marinate for several or even overnight. The result will be a very soft and tender meat. Best if grilled. Enjoy!
