INGREDIENTS
- 2 cups self-raising flour
- ½ teaspoon ground cinnamon
- ½ cup sugar
- 300 g (10 oz) sour cream
- 1 egg
- 3 tablespoons maple syrup
- 3 tablespoons vegetable oil
- 3 bananas, chopped
INSTRUCTIONS
1 Place flour, cinnamon and sugar in a bowl and mix to combine.
2 Place sour cream, egg, maple syrup, oil and bananas in a bowl and whisk to combine.
3 Add banana mixture to dry ingredients and mix until just combined.
4 Spoon mixture into greased 1/2-cup capacity muffin tins and bake in a preheated 200°C (400°F) oven for 25-30 minutes or until muffins are cooked when tested with a skewer. Serve with extra maple syrup.
