Mint, Ginger And Almond Pesto Recipe
Ingredients
- 2 cm ginger root, peeled and grated
- 20 g mint leaves
- 8 tablespoons vegetable oil
- 2 tablespoons light soy sauce
- 1 tablespoon freshly squeezed lime juice
- 1 garlic clove, crushed
- 100 g almonds, toasted
Instructions
- #Toasting the almonds gives the pesto a more intense flavour. Packets of pre-toasted almonds are sometimes available to buy or you can toast them yourself in the oven for 5-6 minutes at 200°C (400°F) Gas 6. Keep an eye on them as they burn quickly.# Put all the ingredients in the bowl of a food processor and whizz until smooth.
