Easy Lemon Coleslaw Recipe
Ingredients
- #For The Dressing#
- 1/2 cup mayonnaise
- 1/2 cup yogurt
- 1/4 cup fresh lemon juice and orange juice
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- 1 tablespoon sugar
- 1 tablespoon vinegar
- Sea salt and freshly ground pepper
- 1 hot red chilli, all seeds removed and finely chopped (optional)
- #For The Salad#
- 6 cups shredded cabbage
- 1 large green or red pepper, cut into strips
- 1 red onion, cut into quarters and thinly sliced
- 1 large apple, cut into quarters, cored and thinly sliced
- 1 large carrot, shredded
- A generous handful of parsley leaves, chopped
- 3 teaspoons grated lemon peel

- #A delicate blend of flavors combine to make this delicious salad. As a variation add 1/4 cup raisins and 1/2 cup coarsely chopped walnuts. This is a tasty accompaniment to grilled chicken or turkey.# Put all the ingredients for the dressing in a bowl and whisk with a fork. Taste and season well. Refrigerate until ready to use.
- Next soak all of the cut up onion in a bowl of water for 5-10 minutes. Drain, rinse and pat dry. This will take away the raw taste of onions.
- And finally combine cabbage, pepper, onion, carrot, parsley and lemon peel in a large bowl. Toss with enough dressing just before serving. The vegetables will then retain their crispness.
- A little squeeze of lemon juice and a generous amount of chopped parsley over the top of the salad should just about do it.
