Ingredients
  

  • 2 cm ginger root, peeled and grated
  • 20 g mint leaves
  • 8 tablespoons vegetable oil
  • 2 tablespoons light soy sauce
  • 1 tablespoon freshly squeezed lime juice
  • 1 garlic clove, crushed
  • 100 g almonds, toasted

Instructions
 

  • #Toasting the almonds gives the pesto a more intense flavour. Packets of pre-toasted almonds are sometimes available to buy or you can toast them yourself in the oven for 5-6 minutes at 200°C (400°F) Gas 6. Keep an eye on them as they burn quickly.# Put all the ingredients in the bowl of a food processor and whizz until smooth.
