Ingredients
  

  • 8 oz medium dried Chinese noodles
  • Oil
  • 8 oz pork tenderloin, thinly sliced
  • 1 carrot, peeled and shredded
  • 1 small red pepper, cored, seeded and thinly sliced
  • 2 cups bean sprouts
  • 2 oz snow peas
  • 1 tbsp rice wine or dry sherry
  • 2 tbsps soy sauce
  • 1 cup peeled, cooked shrimp

  • #Chinese chow mein dishes are usually based on noodles, using more expensive ingredients in small amounts. This makes economical everyday fare.# Cook the noodles in plenty of boiling salted water for about 4-5 minutes. Rinse under hot water and drain thoroughly.
  • Heat the wok and add oil. Stir-fry the pork 4-5 minutes or until almost cooked. Add the carrots to the wok and cook for 1-2 minutes.
  • Add the red pepper and add the remaining vegetables, wine and soy sauce. Cook for about 2 minutes.
  • Add the cooked, drained noodles and shrimp and toss over heat for 1-2 minutes. Serve immediately. #TIME# Preparation takes about 20 minutes. The noodles take 4-5 minutes to cook and the stir-fried ingredients need to cook for about 5-6 minutes for the pork and about 3 minutes for the vegetables. #VARIATION# Use green pepper instead of red, or add other vegetables such as baby com ears, mushrooms or peas. #BUYING GUIDE# Dried Chinese noodles are available in three thicknesses.
