There are many different kinds of noodles. Some are made from wheat flour, some from rice flour and some from bean flour. Egg noodles can be either thin or thick. The thin noodles are sold in “cakes” whereas the thick noodles are spaghetti like and are often called Shanghai noodles. Bean Thread noodles are thin, white noodles which go transparent when cooked. They are mostly used in soups and stews and should be soaked before use. Rice Stick noodles are very thin noodles.
