Traditional Christmas ingredients are given a Chinese twist in this stir-fry that contains cranberries, ginger, chestnuts, and soy sauce.

Remove any skin from the turkey breast. Using a sharp knife, thinly slice the turkey breast.

Heat the corn oil in a large preheated wok or heavy based skillet.

Add the turkey to the wok and stir-fry for 5 minutes, until cooked through.

Using a sharp knife, finely chop the preserved ginger.

Add the ginger and the cranberries to the wok or skillet and stir-fry for 2-3 minutes, until the cranberries have softened.

Add the chestnuts, cranberry sauce, and soy sauce, then season to taste with salt and pepper and leave to bubble for 2-3 minutes.

Transfer the turkey stir-fry to warm serving dishes and serve immediately.

COOK'S TIP

It is very important that the wok is very hot before you stir-fry. Test by by holding your hand flat about 3 inches/7.5 cm above the base of the interior-you should be able to feel the heat radiating from it.
