4 tbsp Vegetable oil
2 crushed Garlic cloves
scant 13/4 cups Coconut milk
6 fillets, skinned and cut into bite-size pieces Chicken breasts
1/2 cup Chicken stock
2 tbsp Fish sauce
GARNISH
sliced red and green chiles, lemon slices and chives Lemon grass
boiled rice, to serve Lemon grass
RED CURRY PASTE
8 dried, seeded and chopped, Red chili
1 -inch/2.5-cm peeled and sliced Fresh ginger root
3 stalks chopped Lemon grass
1 peeled Garlic cloves
2 tsp Shrimp paste
1 leaf, chopped Kaffir lime
1 tsp ground Coriander
3/4 tsp ground Cumin
1 tbsp chopped Fresh cilantro
1 tsp salt and Black pepper

The chicken is cooked with a curry paste using red chilies. It is a fiery hot sauce-for a milder version, reduce the number of chilies used.

To make the red curry paste, place all the ingredients in a food processor or blender and process until smooth.

Heat the vegetable oil in a large, heavy-based pan or wok. Add the garlic and cook for 1 minute, until it turns golden.

Stir in the red curry paste and cook for 10-15 seconds.

Gradually add the coconut milk, stirring constantly (don't worry if the mixture starts to look curdled at
this stage).

Add the chicken pieces and turn in the sauce mixture to coat. Cook gently for 3-5 minutes, until almost tender.

Stir in the chicken stock and fish sauce, mixing well, then cook for an additional 2 minutes.

Transfer the chicken curry to a warmed serving dish and garnish with sliced red and green chilİes. Serve with rice.
